Ingredients:
- –4 Zucchini
- –1 cup of broccoli florets
- –½ cup of mushrooms
- –½ red pepper
- –4 Tbsp of olive oil
- –1 small onion
- –2 cloves of garlic
- –2 cups of fresh spinach
- –1 tsp of Italian spices
- –Salt to taste
- –Parmesan cheese to garnish
Directions:
- 1. Spiralize the zucchini and set aside.
- 2. Heat the olive oil in a large pan. Add the onions and garlic and sauté for 2-3 minutes until the onions start to become translucent . Then add the broccoli, red pepper, and mushrooms. Sauté the vegetables until peppers and broccoli start to turn softer and the mushrooms are cooked.
- 3. Add the fresh spinach, mixing into the other vegetables and cook until wilted 1-2 minutes. Add the zucchini noodles, Italian spices, and salt and sauté for another 1-2 minutes until the noodles are cooked, but not too soggy.
- 4. Remove from the pan to a plate, garnish with parmesan cheese. And enjoy!!
