1. 1. Spiralize the zucchini and set aside.
  2. 2. Heat the olive oil in a large pan. Add the onions and garlic and sauté for 2-3 minutes until the onions start to become translucent . Then add the broccoli, red pepper, and mushrooms. Sauté the vegetables until peppers and broccoli start to turn softer and the mushrooms are cooked.
  3. 3. Add the fresh spinach, mixing into the other vegetables and cook until wilted 1-2 minutes. Add the zucchini noodles, Italian spices, and salt and sauté for another 1-2 minutes until the noodles are cooked, but not too soggy.
  4. 4. Remove from the pan to a plate, garnish with parmesan cheese. And enjoy!!
