Did you try this healthy spring recipe: zoodle primavera? Here is a a low carb and delicious zucchini noodle dish to satisfy your pasta cravings.
Zoodle Primavera Ingredients:
- 4 Zucchini
- 1 cup of broccoli florets
- ½ cup of mushrooms
- ½ red pepper
- 4 Tbsp of olive oil
- 1 small onion
- 2 cloves of garlic
- 2 cups of fresh spinach
- 1 tsp of Italian spices
- Salt to taste
- Parmesan cheese to garnish
Directions:
- Spiralize the zucchini and set aside.
- Heat the olive oil in a large pan. Add the onions and garlic and sauté for 2-3 minutes until the onions start to become translucent . Then add the broccoli, red pepper, and mushrooms. Sauté the vegetables until peppers and broccoli start to turn softer and the mushrooms are cooked.
- Add the fresh spinach, mixing into the other vegetables and cook until wilted 1-2 minutes. Add the zucchini noodles, Italian spices, and salt and sauté for another 1-2 minutes until the noodles are cooked, but not too soggy.
- Remove from the pan to a plate, garnish with parmesan cheese. And enjoy!!
